Kalitsounia: Traditional Cretan Sweet Cheese Pie Recipe
Kalitsounia are among Crete’s most beloved traditional pastries — golden, sweet cheese pies filled with creamy mizithra and wrapped in soft homemade dough.
Combining cheese with sugar, cinnamon, vanilla, orange and a splash of brandy creates a rich sweet-and-savory flavour that perfectly captures the essence of traditional Cretan baking.

Be warned: kalitsounia are addictive — it’s almost impossible to stop at just one.
There’s something special about preparing these traditional pies at home: kneading the dough, shaping each pastry by hand, watching them turn golden in the oven and finally enjoying them warm and fresh with a drizzle of Greek honey.
Today, we’re sharing a treasured family recipe with Greek City Times readers.
Ingredients
For the Dough
1 cup olive oil
1 cup sugar
1kg flour
1 cup strained Greek yogurt
1 egg, beaten
2 teaspoons baking powder
1/2 teaspoon vanilla extract
Juice of 1/2 orange
1/4 cup brandy (optional)
For the Filling
1kg fresh mizithra cheese, ricotta or mascarpone
1/2 cup sugar
1 egg
1 teaspoon cinnamon
1 beaten egg for glazing
Method
Prepare the Dough
In a large bowl, combine the flour, sugar and baking powder. Add the olive oil and mix well.
Stir in the strained yogurt, beaten egg and vanilla extract. Gradually add the orange juice and optional brandy until a soft dough forms that no longer sticks to your hands.
Knead the dough for about 10 minutes until smooth, then set aside to rest.
Prepare the Filling
Preheat the oven to 180°C. In a separate bowl, combine the cheese, sugar, cinnamon and egg until smooth. On a floured surface, roll out the dough to about 3mm thickness. Using a round cutter or glass, cut small circles from the dough. Place a tablespoon of filling in the centre of each circle. Lightly wet the edge of the pastry with water, then fold over to form a half-moon shape and seal the edges with your fingers. Arrange the kalitsounia on a lined baking tray and brush lightly with beaten egg. Bake for approximately 20 minutes, or until lightly golden. Allow the pastries to cool slightly before sprinkling with cinnamon and drizzling generously with Greek honey.

Tip: They are best enjoyed fresh and should ideally be eaten within four to five days — although in most households they disappear much sooner.
